Starts sharing the screen.

customTrack comes from VideoSDK.createScreenShareVideoTrack and carries everything the share needs: the profile, the simulcast choice, whether to capture system audio and — on Android — the consent that factory collected. Without one the share uses h720p_15fps, no simulcast and no system audio, and consent is collected here. On iOS this opens the system broadcast picker.
